But what happens when there's no turkey yet, and thus, no drippings? 2 tbsp diced, unsalted butter

2 tbsp diced, all purpose flour

1 cup / 210 ml beef broth

1 sage leaf

½ tsp kosher salt

30 turns freshly cracked black pepper
Instructions
In a Saucepan, melt the butter on medium-low heat.
Add the flour and stir well for about 1-2 minutes, making sure it does not gain any color.
Add the remaining ingredients and whisk well, cooking on medium-low heat until the gravy thickens.
Serve it at the table in a Small Casserole that matches your Roaster for the wow factor!
